A traditional dessert from the French Limousin. The recipe for Clafoutis aux cerises is made with unpitted cherries. But it is also delicious with apples, pears, or grapes. Clafoutis not only looks fantastic … it tastes delicious! And making it yourself is a piece of cake!

Clafoutis

This tasty dessert is sometimes on the menu in the limousin region when you order a plat du jour. Especially from June onwards when the first cherries are ripe. Making it yourself is relatively easy… the longest part is the baking (30 minutes). That leaves you with just the right amount of time to relax after the main course, looking forward to dessert and enjoying those delicious aromas coming from the oven.
The recipe is very flexible. You can use cherries from the garden or the shop. For even more flavour, simply leave in the pits. You can also use apples or grapes instead of cherries. This way you can enjoy clafoutis all year round!

Ingredients for 4 people

• 400 grams of cherries with pits (or apples, pears or grapes)
• 50 grams of sugar
• 1 packet of vanilla-flavoured sugar
• a pinch of salt
• 250 ml of milk
• 75 grams of flour
• 3 eggs
• 25 grams of melted butter + for greasing
• Icing sugar for sprinkling

Also needed

• Baking pan or ovenproof dish (26 to 28 cm)
• Mixer

Preparation

The preparation is easy and fast. Just make the batter, pour into the baking tin, and pop it into the oven.

Start by preheating the oven to 190 degrees.

Wash the cherries and remove the stems. You don't have to remove the pits unless you prefer. If you are using potted cherries, let them drain well.

If you are using apples or pears instead then peel them first, remove the core and cut them into slices.

Then sift the flour into a bowl and add the sugar, vanilla sugar, and a pinch of salt. and mix well.

Then add the eggs and 25 grams of melted butter and mix briefly. Add the milk in 2 or 3 steps while mixing the batter until there are no more lumps.

Grease the baking tin or ovenproof dish well and spread the cherries (or grapes, slices of apple or pear) on the bottom of your dish. Pour the batter over the fruit.

Bake the Clafoutis in the oven for about 30 minutes until it is done. Remove from the oven and let it cool for a moment. Sprinkle icing sugar on the top and place it on the table… and enjoy!
